Recipe of the Week

Crispy Italian Baked Chicken

2/3 c. mashed potato flakes
1/3 c. grated Parmesan cheese
2 tsp. parsley flakes
1 tsp. garlic salt
1 (2.5-3#) broiler-fryer chicken, cut up
1/4 c. flour
1/3 c. Italian dressing

Heat oven to 400 degrees. Coat baking pan with non-stick cooking spray. Combine potato flakes, Parmesan cheese, parsley flakes and garlic salt in a shallow bowl. Stir until well mixed.

Coat chicken pieces with flour; dip in Italian dressing. Coat with potato flake mixture, patting until chicken is thoroughly coated; shake off excess breading. Place in prepared pan. Bake 45 to 50 minutes or until instant-read thermometer reaches 165 degrees.

Recipe of the (Mid) Week!

Ham & Potato Casserole

26 oz. frozen hash browns
1/4 c. oil
2 c. diced cooked ham
2 cans cream of potato soup
2 c. shredded Cheddar cheese
2 c. sour cream
1/2 c. Parmesan cheese

Brown hash browns in oil. Remove from heat and stir in ham, soup, 1 1/2 c. Cheddar cheese, sour cream and Parmesan cheese. Pour into a greased 9x13 pan. Sprinkle 1/2 c. Cheddar cheese on top and bake at 350 degrees for 35-40 minutes.

TJ Maxx & Marshalls: I'm in shopping heaven!




There are 2 kinds of shopping: the boring, have-to-get-it-done kind and the fun, euphoric, look-at-all-this-great-stuff kind. For me, TJ Maxx and Marshalls are the epitome of the fun kind. I LOVE to shop, but I don't always have the time or the money to do it. When TJ Maxx and Marshalls contacted me to go shopping in their stores, I couldn't have been more excited! I was given a gift card for each store and I couldn't believe how much great stuff I could find at both!

Since I always buy stuff for my kids, I made the decision that I'd use this opportunity to shop for myself. I will admit, I felt a little guilty about it, but we mommies have to take care of ourselves every once in a while, too, right? I needed so many things so I wasn't exactly sure where to start. These stores are great because you can find pretty much anything you're looking for all in one place. I looked at everything from boots to bathroom rugs!

At Marshalls I ended up getting a cute orange wrap sweater for only $19.99 and a 6-pack of some really comfy socks for $6.99. I was really impressed at the variety of Christmas gifts they had to choose from. They had a great selection of toys for the kids and all kinds of unique gifts for adults, from beautiful picture frames to gourmet chocolates.

At TJ Maxx I ended up buying more since I was shopping without kids this time! I got a super cozy pair of Nautica pajamas that retail for $50 for only $19.99! I also got a pretty new bra for the unheard-of price of $7.99 and a silky nightie for $12.99. I found a great set of thick velvety gloves (which I was in desperate need of) for $14.99 as well. I had a great time shopping at TJ Maxx since I could take my time and look at all of the great things they had there. I can't wait to go back again!

Andes Mint Brownies

1 package brownie mix
2 c. powdered sugar
1 stick margarine
1 TBSP water
1/2 tsp. mint extract
3 drops green food coloring
10 oz. semi-sweet chocolate chips
9 TBSP margarine

Prepare brownies according to package directions for cake-like brownies. Cool completely. Combine powdered sugar, 1 stick margarine, water, mint extract and green food coloring in mixing bowl; beat until creamy. Spread over brownies; refrigerate until set. Melt chocolate chips and 9 TBSP margarine in microwave, checking and stirring at 3o-second intervals. Let cool until lukewarm, stirring occasionally. Spread over filling. Chill in fridge before cutting into squares.

Recipe of the Week

Zesty Italian Crescent Casserole

1# lean ground beef
1/4 c. chopped onion
1 c. spaghetti sauce
1 1/2 c. shredded Mozzarella cheese (6 oz.)
1/2 c. sour cream
1 8-oz. package refrigerated crescent rolls
1/3 c. shredded or grated Parmesan cheese
2 T. butter or margarine, melted
1/4 tsp. garlic powder
Parsley

Preheat oven to 375 degrees. In a large skillet, cook ground beef and onion until meat is brown. Drain off fat. Stir in spaghetti sauce; heat through.

Meanwhile, in a medium bowl combine Mozzarella cheese and sour cream. Spread the meat mixture in a 2-quart baking dish and spoon the cheese mixture on top.

Unroll crescent dough and separate into triangles for a round baking dish or press edges together and roll out slightly into a rectangle for a rectangular baking dish. Place dough over the cheese mixture. In a small bowl, combine Parmesan cheese, melted butter and garlic powder; spread over dough. Sprinkle with parsley.

Bake for 20-25 minutes or until crust is a deep golden brown. Makes 8 servings.

Recipe of the Week

White Chili

2# dried Great Northern beans
1 onion, diced
1 TBSP cooking oil
1 TBSP oregano
2 tsp. cumin
1 1/2 tsp. seasoned salt
1/2 tsp. cayenne pepper
4 1/2 qt. chicken broth
2 garlic cloves, minced
8 boneless chicken breasts, cubed
2 cans (4 oz. each) chopped green chilies

Place beans in a saucepan; cover with water and bring to a boil. Boil 2 minutes. Remove from heat. Soak 1 hour; drain and rinse. In a 5-qt. dutch oven, saute onion in oil until tender. Combine seasonings and add half of the mixture to the dutch oven. Saute 1 minute. Add beans, broth and garlic; bring to a boil. Reduce heat and simmer 2 hours. Coat chicken with remaining seasoning mixture; place in a 15x10 baking pan. Bake at 350 for 15 minutes or until juices run clear; add to beans. Stir in chilies and simmer 1 1/2 to 2 hours.

Talk to Me Tuesday!


So I want to try this out as a weekly feature on my blog...Talk to Me Tuesday! I would like to get to know all of you better, and I thought this would be a fun way for all of us to learn more about each other. Each week, I'll post a topic and you can leave a comment regarding that topic if you'd like.

This week, I'd like for you to tell me about something new you've recently started doing. It could be anything from trying to get in shape to learning to bake...whatever you want to share! I'll start...

Last week, I started working part-time. I've been home ever since I went on bed rest nearly 5 years ago with my twin boys. It's been an emotional adjustment for me to be away from them and it's hard because I know that it means a new chapter in my life is starting. I can't believe they'll be starting school next year already! :(

I am still very thankful for this job opportunity (I'm working at my church) and the hours are so flexible that I can go in whenever it works out for our family. I just have to get really good at juggling a few more things! (Hey, that's what mommies do best anyway, right)?

Recipe of the Week

Rotisserie-Style Roasted Chicken

2 tsp. salt
1 tsp. paprika
1/2 tsp. onion powder
1/2 tsp. dried thyme
1/2 tsp. white pepper
1/4 tsp. cayenne pepper
1/4 tsp. black pepper
1/4 tsp. garlic powder
1 onion, quartered
1 (4#) whole chicken

In a small bowl, mix together all seasonings. Remove and discard giblets from chicken. Rinse chicken cavity and pat dry with a paper towel. Rub each chicken inside and out with spice mixture. Put onion inside the cavity of the chicken. Place chicken in a resealable bag or double wrap it with plastic wrap and refrigerate overnight (or at least 4-6 hours).

Preheat oven to 250 degrees. Place chicken in a roasting pan and bake uncovered for 5 hours, to a minimum internal temperature of 180 degrees. Let the chicken stand 10 minutes before carving.

Recipe of the Week

Beef, Cheddar and Potato Pie

2 lbs. ground beef (I use less--more like 1 1/2 lbs.)
2 carrots, cut into 1/4" cubes
1 large onion, cut into 1/4" cubes
2 stalks celery, cut in 1/4' cubes
1 large clove garlic, finely chopped
1 large baking potato, peeled and cut into 1/4" cubes
1/2 c water or beef broth
8 oz. shredded cheddar cheese
Salt and pepper
2 sheets frozen puff pastry, thawed but cold
1 large egg yolk, beaten with 1 Tbsp. water

Preheat oven to 375 degrees. In skillet, combine beef, carrots, onion, celery and potato and cook, breaking up meat, over med-high heat till beef is cooked through and some liquid has evaporated, about 15 mins. Lower heat to med, add water or beef broth and cook 10 mins. Add the cheese, 2 tsp salt and 1/2 tsp pepper. Let cool.

On floured surface, roll 1 puff pastry sheet into 12" round. Place in 10" skillet or deep pie dish. Roll remaining puff pastry sheet to 11" round. Using slotted spoon, transfer meat mixture to the skillet. Lightly brush the edge of the crust with some of the egg wash, then place the second sheet on top. Press the edges to seal, then trim to 1/2" edge.

Place the pie on a baking sheet. Brush the top with more of the egg wash and cut an X into the pastry. Sprinkle with 1 tsp salt and 1/2 tsp pepper. Bake for 45 mins,tenting with foil if crust darkens too quickly. Transfer to rack to cool for 15 mins.

Five For Fighting "Slice" Review



Five For Fighting is back with a new album, Slice! Thanks to the One2One Network I had the opportunity to listen to it and let me tell you, it did not disappoint!

I've always been a fan of the music Five For Fighting puts out. John Ondrasik lays down the vocals and has such an easily recognizable voice--he brings something unique to the table with his sound. There wasn't a track on this CD that I didn't like! Most of the songs have more of a ballad-type feel to them, which is the style of music I typically like to listen to. It's the perfect soundtrack for anything you're doing, whether it's cleaning around the house, driving in your car, or hanging out with friends and family.

Each song tells a different story and evokes all kinds of emotions. Titles on the album include:
