Recipe of the Week

Skillet Shepherd's Pie

/2# ground beef
1/2 c. chopped onion
1 c. each frozen peas & corn, thawed
1 TBSP ketchup
1/2 TBSP Worcestershire sauce
1 tsp. minced garlic
1/4 c. beef broth
1/2 TBSP corn starch
1/4 c. sour cream
8 potatoes, mashed with butter and milk
Cheddar cheese

In a large skillet, cook the beef & onion over medium heat; drain off fat. Stir in the corn, peas, ketchup, Worcestershire and garlic. Reduce heat; cover and simmer for 5 minutes. In a small bowl, combine beef broth, corn starch and sour cream; mix until smooth. Combine with beef mixture. Spread mashed potatoes over the top and sprinkle with cheese. Cover and cook until cheese is melted.
