Recipe of the Week

Asian Beef & Noodles

1# lean ground beef
1 small green bell pepper, sliced
4 green onions, thinly sliced
2 TBSP ginger, finely chopped (I used about 1/2 tsp. ground ginger)
1 clove garlic, finely chopped
1/4 tsp. red pepper flakes
1 tsp. sugar
3 TBSP stir-fry sauce
3 TBSP lime juice
8 oz. thin spaghetti

Bring a large pot of lightly salted water to a boil. Cook the ground beef in a skillet until no longer pink. While beef is cooking, prepare spaghetti according to package instructions. To browned ground beef, add green pepper, green onions, ginger, garlic, red pepper flakes and sugar to skillet; cook for 5 minutes, stirring occasionally. Turn off heat and stir in stir-fry sauce and lime juice. Drain spaghetti and add to skillet with beef mixture. Toss to combine. If the noodles seem a little dry, you can add a little more stir-fry sauce to taste.
